Rating: - Chef Kathleen Rocks!
I first encountered Chef Kathleen's delicious culinary abilities in Shape magazine, and rushed to buy her book. I love the healthy recipes, most of which emphasize a fresh, simple approach to cooking wonderfully tasty food. I was slightly bummed that there weren't pictures (I'm a visual person), but if it meant more room for recipes, I adjusted. For those who can't eat a meal unless they know how many calories it contains--you will probably complain that this book doesn't contain caloric information, so go ahead and go back to your prepackaged 101.5-calorie Weight Watchers meals or whatever. Those of us who innately know good healthy cooking will be eating well with Chef Kathleen!
Rating: - Quick, Easy, Inexpensive, Kids love the food
The recipes are quick with short shopping lists. I have made over half the recipes in this book and haven't been disappointed even once. My husband has liked almost everything including vegetables he "hated". Until this book I tried everything to get my family to eat better and failed. It is a nice feeling to know that they're getting the nutrition they need. That I get to spend less time cooking is a big bonus too!A note to the calorie counters out there: Not everyone cares or has the time to deal with that especially for a big family. I know we're eating better than the pizzas and burgers and frozen stuff we used to eat. I have learned how to use more fresh foods and how to start portioning and planning ahead thanks to the easy way the author presents the lessons. I say Bravo to Chef Kathleen and thank you!
Rating: - Good Recipes + Tips to Motivate You to Lose Weight
I first saw Kathleen on one of the morning talk shows and I was inspired by her story. She loved food and not only cooked it professionally but, was almost obsessed with it. She was substantially overweight as a result. When she was hired as spa chef at a posh Hawaiian resort, she rose to the challenge of coming up with delicious, satisfying and healthful food. She ended up losing 80 lbs. and developing a new cuisine which she shares with us in her book. One of the things I especially like about these recipes is that they consider texture to be as key an element as taste, aroma and calories. A lot of the diets forget that. I think that's why liquid diets don't work. Chewing is one of the most satisfying aspects of eating. The baked asparagus has become one of my all-time favorites. I make it often and have passed on the recipe to many different folks. I hope that KD includes nutritional information in her next book so that all those whiners would shut up.
